Eggs in the Casserole with Chorizo

  • 2 tablespoons olive oil
  • 1 cup chorizo, in slices
  • 1/4 cups green bell pepper, in small cubes
  • 1 1/2 cups Del Fuerte® Spiced Tomatoes, presentation of 345 g

  • 3 eggs
  • 1/4 cups Cotija cheese, fallen apart
  • parsley, finely chopped, to decorate
  • bread, in slices, to accompany

  • Heat the olive oil in a cast iron pan over medium heat and cook the chorizo for 8 minutes or until golden brown.
  • Add the green bell pepper and cook for 2 minutes. Later, bathe the ingredients with the Del Fuerte® Spiced Tomatoes, cook for 5 more minutes and season with salt and pepper.
  • Add the three eggs to the pan, on top of the sauce, very carefully and without breaking them. Cover and cook the eggs in the pan for 5 minutes. Sprinkle with Cotija cheese and parsley.
  • Serve the eggs in the casserole with chorizo in the same pan and accompany with sliced bread.
